Fall Side Dish

This a super easy and healthy side dish that is great to make in the fall. I find it filling enough to eat as a main meal, but if I was serving it to somebody else I would probably roast some chicken too!

Ingredients:
Butternut squash (cubed)
Brussel sprouts (halved or quartered)
Cranberries
Small apple (cubed) *granny smith is the best in this!*

Oil mix: olive oil, brown sugar, salt and pepper to taste (I use about 3 table spoons of oil, 1 teaspoon of sugar, then a few shakes of salt and pepper)

Preheat oven to 400
Place all fruits and veggies into a mixing bowl
Dump in oil mixture
Toss everything together
Dump the whole thing onto a baking sheet and spread so in a single layer
Bake in oven for 30-40 minutes (keep an eye on it, baking time depends on how big your chunks of veggies are)

An voila! You have a ridiculously easy, beautiful, colorful, and delicious dish that is sure to impress. Best part about this recipe is it can be done with any combination of vegetables, mix it up depending on the season!
